Just posting my first brisket, finally. I was installing a pool heater at the same time so I over cooked it slightly ( only one area). You can see this in some of the cuts. Now that is a beautiful sight. I thought I had a lot of meat on the smoker today, but you showed me I did not. I love that rack idea, now I want to see how many I can fit on mine.

I have a WSM. I could not get good temp control with the water pan. I had the same problem as you trying to keep the temp at 250. I now forego the water and put aluminum foil over the water pan. I do not want to speak completely for Tinspark, but I think he is happy with the smoke flavor. I think it was just an intriguing idea to have a convertible GF so you can also make it a stick burner.

Pick what you want to do that day.

I remember that thread and idea. I am intrigued by this and am glad your considering trying it out. I think the only part that kind of concerns me is how efficient these smokers are. So your fire will be smaller that an offset. I think you can still get a clean small burn but that will be the trick....

Dargo - how do you like the Meater temp probes? Do you have the block w WIFI? Good eye, I have the block and I love the set up. I have used all 4 probes with meat in 2 smokers and all worked great. Graphs the cook like most of the wifi temp probes out there. I would recommend these to anyone willin...

I put mine directly on the grill to get more smoke. This! And don't be afraid to wap itnin bacon. Last one I did was indirect over live fire. Thanks Dargo, Got some much needed rain last night, which keeps some of the cooking smell from drifting too far... One of the neighborhood cats was lurking around the back yard though. It was probably was attracted to the smell.. LOL! The rain keeps some of the night time cook smells from traveling...
