120 Gallon Patio Model

Post by onesquin » May 21st, 2014, 9:37 pm

I have not built myself an every weekend patio model yet so this build is WAY overdue.

I already have all the pieces and metal sourced and almost everything cut and torched. Really just need to grind and weld it together.

Cooking Chamber = 24 inch D X 51 inch L ( I used 49 in for the pit calc to accommodate the bell on one end )
Firebox = 22 X 22 X 20 Tall which yields 133% of recommended size as I might start with a WC or add one later.
Chimney is 4 inch X 38.5 inch
Damper will be 3 X 12 slide on the side

I have some really nice stainless shelves to dress it up as well.

Somebody needs to talk me into starting with the WC and not adding it later. I want to start making my own sausage which is one good reason. Does anybody cook ribs in their WC? How do they turn out compared to the main CC?

I just moved into a house so I added an attic staircase in the garage two weekends ago to get the clutter out of the garage. Next is to run a 60A sub panel to the garage to hook up my welder. Once that is done the sparks will be flying as I need to get this thing done ASAP as it has been way too long since I cooked my last batch of Q.

I would definitely build it with the WC vs adding it later. It is a pita to work on a smoker that is well seasoned. I know that TQ puts a small charcoal basket in is WC and uses the WC for small cooks where he doesn't need the room in the CC.

If I even think I might add it later, I would do it as I made it. Or it may never happen.

Is 133% too big a ratio for the FB?

I am thinking about insulating between the FB and WC to make sure I can control the heat in the WC. Is that a good or bad idea?

That is a little on the large side, 115% would be MAX for me personally.

So I went back to the calc and came up with the below.

Cooking Chamber = used 23.5 instead of 24 so 23.5 inch D X 49 inch L ( it is actually 51 but I used 49 to accommodate the bell on one end )
Firebox = smaller. 20 X 20 X 19 Tall which yields 107.3% of recommended size and I will add a WC now.
Chimney is shorter at 4 inch X 30.25 inch
Damper will be smaller at 3 X 8 slide on the side
Opening is 60.8 sq in

These numbers should look a little better.

So my neighbor is selling this vertical. I might go back and measure it and use it for my warming cabinet if big enough. Any downside in doing this? I'll have to bolt it on as welding stainless to steel might not be feasible.

It might be ok for a wc but I have one and they're a pretty thin and the wind really affects the temperature.

Ok. I was doing some thinking on the warming cabinet and I want to make it rectangular. 24x16x20 yields 108%. The beauty of these dimensions is that it allows me to get the stainless and aluminum steam pans in the warming cabinet.

I don't think this will have any affect on firebox performance. If it does please let me know. I might draw it all up tonight.

After checking my inventory I decided to go with 22 x 19 on the fire box size and 18.5 in tall. I will still be able to get the pans in and it took the most advantage of my inventory. That will leave my warming cab chamber about 27-28 inches tall. I think I will be very happy with this size.

Not having all the right tools is painful. No torch and no coldsaw makes for a long day. I thought I could get away with cutoff wheels as I had everything torched already. Well since I am doing the WC I need to cut the holes for the vents so I am at a standstill until I get access to a torch.

After searching during lunch hour I found a rental place with a torch. Called and got details and said I would be there after work to get it. Drive the opposite way from my house and get there and all their torches are out of gas. Not happy.

So I got everything laid out and ready to be torched. Hopefully they get gas tomorrow. I'm ready to get this thing put together.

Now that I overcame my resource issues I made a bunch of progress in 4 hours after work today.

I insulated between the FB and WC. I put a small vent in the WC to help regulate heat. I got two of the long welds rounded over. My goal is not even be able to tell it was welded. I want it to look like it was made from one piece of metal. Very happy so far.

I got a little done today. Was really hot and I was a little dehydrated from yesterday's activities. I have a lot of welding to do followed by lots of grinding.

So I finally got a weekend to work on the smoker. Spent Saturday welding and grinding and installing the baffle plate. Sunday I finished the welding and grinding on the warming cabinet as I ran out of wire Saturday. Then I started putting everything together this morning and got quite a bit done. It actually looks like a smoker now. Want to get it done before Labor Day.
