Im gonna call BS on this video, cuz I didnt once see you open up or drink a drop of beer while lighting the fire. Maybe its just my cooker, but she wont get burning good unless there is a beer being drank close by. :beer:

OH yeah!, well I had a 8 track in my Falcon panelvan in 1975 and a Beta video player in 1977!, mostly I was just acknowledging the bit about being on Beta format =))

Thanks guy's! I would like to see how others do things as well! if you guys feel like it, let me know and I would be happy to show you some tricks that we use to make these video's and post them. all our video's are shot using our phones. I use windows live movie maker which is free to edit them

Very helpful video guys, thanks. A couple of questions. This is my first smoker build and cooked twice. I've been using charcoal for fuel and hickory or apple for smoke. I see that your using mostly Oak and some coal for fuel. 1. Are you using the charcoal to light the Oak and the oak is your source of heat and then when your ready to smoke you add some other wood? 2. Does the oak affect the taste of your food? 3. I've been having trouble maintaining 225 -250 degrees and was wondering if because of the crap small chunk coal I'm getting if it packing to tight in the fire basket and choking the flow. Any ideas or suggestions on that?

Mainly we use the charcoal just to start the wood for the smoke.....we have been using hickory for main smoke and just throwing in some oak....about a 80 to 20 percent ratio....

Using charcoal as the only fuel source probably won't work in a reverse flow?
