Only time you get a bad taste with charcoal is when it is not being burned completely or if you use lighter fluid. If it is burned properly it is thin blue smoke. I only use it to start with and use wood the rest of the time. Some of the best Q have ever had/cooked was cooked over charcoal!

No funny taste here other than what Frank explained. I personally use Kingsford because it seems to work best in my cooker, but I like the flavor of lump better. It also burns hotter. If you buy lump, buy a good quality lump. I always hate cleaning out my firebox to find nails, ceramics, other misc garbage that was burned when they made it. :wtf:

Frank, would you please share the design of this smoker? It has a very similar design to my idea I have for mine. I'm curious about that vertical cooker and wheel particularly.

Forgive me if this has been addressed , I would need a fanily size smoker 90% of the time, is it possible to build a larger unit say to handle food up to 100 guests and baffle it off for light duty?,

You could build an RF with a warming cabinet and have a baffle from the FB to the WC so you could just cook in the WC or in the whole CC if you need to. I would build 2 smokers, a large one and a small one for the family cooking. jm2cw

I'm going on my 3rd smoker this weekend. The first two turned out to be quite big and not really family size. On the other hand, with the 275 oil tank smoker, 3 logs and a small bed of charcoal keeps the smoker running wonderfully and I've literally cooked only 1 chicken and then also cooked 31 slabs of ribs with not a spare inch left....so other than the fact it is huge and not outside the patio door, it really accommodates both needs.

This third smoker will finally be smaller but it's still 80 gallons. Just something to think about

Ok i have A question. By the pit calculator, it says that i need a 10 1/4 inch half moon opening from fire box to chamber. So is that how wide or.how tall it needs to be

I have been reading on how to make your own charcoal using a 50 gallon outer barrel and a 30 gallon inner barrel. Have any of you done this before and what kind of results do you get when doing long cooks with homemade lump charcoal?
