First Cook on New UDS

I finally got to try my UDS out yesterday. We did the seasoning burn in, then decided to cook the last of our Pork Steaks on it, for the first cook. We had cooked the other 4 pork steaks on my brothers old Brinkman a couple days ago.

I just had to show a picture of my baby.

The UDS had been going since noon seasoning using Kingsford Briquetts. I added 3 small splits of White Oak to the charcoal basket before placing the racks.
I put a Weber grill rack on my second set of grill bolts, and put the 4 pork steaks around the outside of the grill at app 5:30 PM. I was running approximately 290 degrees on the Taylor Thermometer. Note: I have a Maverick 733 on order when the wagon they shipped it on gets here.

My wife put together a medley of Carrots, Onions, Bell Peppers, Cauliflower, and Brussels Sprouts on foil on a second Weber grill rack. I put the vegatable medley on the top rack bolts at 6 PM. At 6:30 I turned the pork steaks, and checked the vegatables. The steaks were looking very good.
I pulled everything at 7 PM.

Pretty healthy eating, I would think.

They tasted as good as they looked.

The plan is to do a second cook this afternoon, and do 3 racks of Chicken Legs.

Current Smokers: Backyard RF Offset and Hybrid RF Offset trailer rig with Cowboy cooker and fish fryer, always room for more........
