Venison and wild game rub

Post by RedShed » November 20th, 2020, 12:12 pm

I am looking for some help coming up with a rub for venison and wild game. I harvested two deer during deer season. Does anyone have any recipes or ingredients that they use on back straps?

I don't have a recipe but oak ridge bbq rubs sells a rub especially for venison. I've used Montreal steak seasoning a few times and it's pretty good.

I have never smoked venison but my buddy does. Trim all the fat and silver skin. Back straps get brined overnight, then dried for a few hours. He uses a pecan rub before it goes on. It’s awesome.

Careful....not much fat in venison so it will dry out pretty easily.
