Would it be practical for someone that lives in the South to build a gravity feed without the cabinet being insulated? Has anyone done it?

Yes it is practical in the South and yes, RC has done it.

I have done it but only because I built it on top of the FB of my stick burner. I say that because I made mine out of 1/4" steel and it is best to get it up to temp first using the FB below then switch it over to the GF burner. If you are building it out of thin stuff like normal people do, I would recommend insulating and skinning it to make it last a long time.

How do I figure out how to size the chute and "firebox"? I have easy access to 10 gauge steel. I was thinking of retrofitting the GF to one of my homemade cabinet smokers.

Smokerplans.net is the best way. The thing is almost all the GF smokers built through this site comes from plans from these guys. The money isn't much and it gives you very detailed set of plans.

As RC said best way is to stump up for a set of plans and you get all the dimensions.
