Homemade rub. The main difference in this rub and winning ingredient was the siracha, give it just a perfect amount of sweet heat.

Memorial day weekend was a good one for the smoker. Used the GF Saturday and Monday. Did meatloaf on the egg on Sunday.

What a fantastic build. I built a mini GF earlier this year, and am very pleased with the food that comes out. Have you figured out the best method for introducing smoke? chunks of wood under the charcoal grate, or pieces placed in the charcoal chute every foot or so?

Thank you very much.

My favorite method for smoke is placing wood under the charcoal grate in the ash pan. I use much less and feel like I can control the amount of smoke flavor I get easier.

Just posting my first brisket, finally.

I was installing a pool heater at the same time so I over cooked it slightly ( only one area). You can see this in some of the cuts.

Over it has less bark than the offset but great flavor and very moist. I am loving this GF.

Brisket is always a tough cut to do perfectly as it is such a long cook. Guess that is an excuse to do it again!

Most folks remove there arrows after the kill and not leave them in...
