Gravity feed smokers are awesome units, I have logged 35 cooks in my back yard cooker now in the last year and they have all turned out great!!
With an added fan controller they almost run themselves.

Also, I am interested in seeing what you do in version 3.0 in the cook chamber in order to alleviate internal liner welding.
Interior wall standing seams and a lap joint into a grease pan, sealed??

Facing an issue that's new for me....kind of a white scale inside the cc. They Changed the brand of briquets but still there is some.....any tips in which direction I have to search for a solution would be appreciated.ImageImage

Did you clean the interior with a soap or cleaning solution? Any chance it is just the residual from such?

Is it really humid there or do you use a water pan? If humidity gets trapped inside it could be mold?

Try spraying the inside down with cooking oil if you have not done that yet.
That may stop that white scale.
After a few cooks all the fat and steam should cure the inside nicely
Also do not clean with water after the cooks. I tried that once and mine turned a little white as well.
I do use a little water in my reverse flow smoker and it is fine, but that method did not work so well in my gravity feed unit.
Just scrub it down with a brush and a long scraper after each use and get the residue pile out of the bottom where it all lands.

Well....did some runs, with all kinds of charcoal and after i posted my last problem. The white redidue disapeared and have never seen it again. The team made som good results the latest contest and the pp from today was also ....best I ever had[emoji16]

Thanks for the tips guys....i supose it was some humidity captured between the layers of oil....

Glad to hear that the white residue went away. I agree that it was likely moisture interacting with oils. Either residual oil from the metal or animal fat, either will turn white when in contact with condensation
