Christmas for me was uneventful, which was great, just me and my wife. Same for New Year's eve, I went to bed early. One thing I did do on the day before New Years (12/31/22) was make some deer summer sausage for the first time.
I let it set in the refrigerator overnight and smoked it on New Year's Day.
New Year’s Day was nasty outside with snow that turned to a light rain all day long, which is not normal for western Colorado, it's normaly in the teens and twenties for the high not in the forties .
With it snowing and raining all day may have helped with the cook, I needed to smoke/cook it starting at ~150 degress F and slowy increase the temp over time to a final temp of 180 to 200 to finish.
I'm happy to say the summer sausage cameout great for being my first time.
