Thanks for the add my name is Joe I've been smoking on a UDS from about 15 years now and she's getting tired. I'm an engineer by trade and have access to a full fab shop here at work so it's time to build a new reverse flow smoker. I've read through the calculations and everything seems to be fairly straight forward I just need to determine my size. I'm leaning towards a 24x24x48 with 2 cooking grates. The only time I would need more room than that would be in the spring. I typically smoke between 50-100 pounds of Whitefish but I was thinking I could stack a couple racks in between for those runs being as the fillets are roughly an in thick.

Looks like the place is a wealth of information so I'm going to get going with some research here. I'll start a thread once I get rolling, thanks again for the add!

That is a great size pit for a backyard model...plenty big enough for a neighborhood party and small enough to fire up for just you and the Mrs.
