Now that I feel human again...

Wanted to thank Frank, Tom, DC and everyone else that helped make this the greatest gathering yet! Amazing people and amazing food made this a memorable weekend.

I plan on making a timeline thread with all the pics and put some names to all the faces. Of course I plan to do a lot of things......

Ok,
The bellys were on the lift to get them in the warmer air to speed the curing process. The bacon smelled great when it was being sliced.

I also want to say THANK YOU to Frank, Tom and The Czar for hosting this event.

As for the next gathering it’s not decided yet, but the next Fall Gathering will be at HQ again. So if you can only make one make plans for that one for sure it’s going to be hard to beat.

p.s. Just to clarify, "pirate eyed" is a term we use in Aus when someone has had a few too many tasty beverages.

RC is right on with the bellies. They usually soak in the cure for 24 hrs. Since we were doing a rapid cure, we sent em to the ceiling to draw the cure in a bit faster.

The gathering was a blast!! The little bit that I was there. It was great to put a face with the names. I'm ready for the next one, hopefully I can stay longer. Thanks to the Smoker Builder crew for the hospitality!!

I know I've been a stranger to the gatherings and this site, but I'm sure glad I made it down for a short time Friday. Great to see some old friends and meet some new ones. (One of these days I hope to meet this guy they call the Czar. I here he's a legend in his own mind.)

Looks like I missed some good times, and fine vittles!

Awesome times. Too bad everyone beat me to the bacon side on the scissor lift. I was going to say that is the proper method to make top shelf bacon.

Oh, and despite how it looks in Pete Mazz’s photo, I promise my kid didn’t use the firebox on LuAnn as a urinal!

Here’s the Stroganoff


Later that night there happened to be a 12 year Vanwinkle present....


Then we cut up one of the pigs. Made some 1.25” thick bone in loin chops. Cooked them reverse sear in Mack to 130*F internal temp then seared on the fire pit. Holy smoke they were good!

Then the next morning after the bacons were done curing. This is right before they went on the smoker.
