Just got back from the fall gathering at the Smoker builder headquarters, what a great time,which I'm sure was had by all. There was so many talented and innovative craftsman there willing to share their ideas,well, it was just inspiring,and I can't wait to start my next project. Not to mention the most delicious food,which just flowed all weekend. Where else can you watch ,learn and participate in how to separate and butcher a pig,,,hands on.Image. Just wanted to says Thanks to Frank, Tom,and The Czar,and their families for hosting such a great event,,can't wait for the next one!!!

I wasn't there :hissy: but I heard them say on the Smoke Show that they were doing a rapid bacon cure on those bellies so they could smoke it the next day. I believe they put it up there for the air flow and to keep it out of the way if I understood them correctly.
